Chocolate Bliss Balls

Here’s a twist on regular Bliss Balls with the addition of chocolate nibs and peppermint—delightful for a special holiday. Organic cacao nibs are nature’s original chocolate chips! Made from crushed cacao beans, they are crunchy, flavorful, and packed with powerful nutrients, antioxidants, and fiber. If you are not partial to agave, you can substitute maple syrup or delicious local honey.

Total Time: 20 minutes plus time to chill
Makes: About 25 balls

1/3 cup cacao nibs
1 cup almond butter
1/2 cup tahini
1 tsp. coconut oil
2 Tbsp. dark agave nectar
1 tsp. vanilla extract
2 tsp. peppermint extract
1/2 tsp. nutmeg
1/4 tsp. ground ginger
pinch sea salt
1/2 c. pine nuts, crushed
1/2 c. ground hempseed

Place cacao nibs in a blender or coffee grinder. Pulse until finely ground; set aside.

In a separate bowl, mix together almond butter, Tahini, coconut oil, agave, vanilla, peppermint, nutmeg and ginger until smooth.

Season with salt. Mixture will be very thick. Fold in cacao nibs and pine nuts. Chill for a half hour. Roll into balls, then roll balls in ground hempseed.

Freeze for an hour before serving.
